M & M Cookies

Ingredients
- 1 1/2 sticks unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 egg
- 1 1/2 teaspoons vanilla
- 1 (3.4 ounce) box Instant Vanilla Pudding Mix
- 3/4 teaspoons baking soda
- 1 teaspoon kosher salt
- 2 cups flour
- 1 1/2 cups M & M candies
Instructions
- Preheat the oven to 350 degrees.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar beating until light and fluffy.
- Add the egg and vanilla and continue mixing.
- Mix in the vanilla pudding, baking soda and salt.
- Mix until combined, scraping sides as needed.
- Add the flour and mix just until combined.
- Stir in the M & M candies.
- Using a scoop, scoop dough onto a parchment lined baking sheet about 2 inches apart.
- Press some extra M & M candies into the tops of each cookie.
- Bake for approximately 10 minutes or until edges begin to turn light brown.
- Allow to cool on the baking sheet for 5 minutes and then transfer to wire rack to cool completely.
