Ingredients
  1. 1/2 cup sugar
  2. 1/3 cup red wine vinegar
  3. 3 cloves garlic, minced
  4. 1/2 teaspoon ginger
  5. 1 teaspoon cumin
  6. 1/2 teaspoon cinnamon
  7. 1/2 teaspoon cloves
  8. 1/4 teaspoon cayenne pepper
  9. 1 pound bag rhubarb, frozen
  10. 1/2 cup red onion, diced
  11. 1/2 cup golden raisins
Instructions
  1. In a large saucepan, combine sugar, vinegar, garlic, ginger, cumin, cinnamon, cloves and cayenne pepper.
  2. Whisk to combine and cook over low-medium heat until sugar is dissolved.
  3. Add the rhubarb, onion and raisins.
  4. Cook over medium heat until rhubarb softens and mixture is thickened.
