Rhubarb Chutney

Ingredients
- 1/2 cup sugar
- 1/3 cup red wine vinegar
- 3 cloves garlic, minced
- 1/2 teaspoon ginger
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 teaspoon cayenne pepper
- 1 pound bag rhubarb, frozen
- 1/2 cup red onion, diced
- 1/2 cup golden raisins
Instructions
- In a large saucepan, combine sugar, vinegar, garlic, ginger, cumin, cinnamon, cloves and cayenne pepper.
- Whisk to combine and cook over low-medium heat until sugar is dissolved.
- Add the rhubarb, onion and raisins.
- Cook over medium heat until rhubarb softens and mixture is thickened.
