Ingredients
  1. 1 pound ground chicken
  2. 1 egg, slightly beaten
  3. 1/2 teaspoon garlic powder
  4. 1/4 teaspoon onion powder
  5. 1 teaspoon salt
  6. 1/4 teaspoon ground black pepper
  7. 1/4 cup bread crumbs
  8. 1/4 cup bleu cheese crumbles
  9. For the Bleu Cheese Sauce
  10. 1 celery stalk, thinly sliced
  11. 1/4 cup bleu cheese crumbles
  12. 2 tablespoons mayo
  13. 1/4 cup plain greek yogurt
  14. salt and pepper to taste
  15. Mix all ingredients in small bowl, spread onto toasted buns and top with slices of Buffalo Chicken Meatloaf
Instructions
  1. In a bowl, combine all the ingredients until well combined.
  2. Form into a loaf and place in a lightly sprayed casserole dish.
  3. Cover with foil and bake at 425 degrees for 35 minutes or until the internal temperature is 170 degrees.
  4. Meanwhile make the Buffalo Sauce Glaze
  5. In a 1 cup measuring cup mix 1/4 cup Hot Sauce (I use Frank's Red Hot) and 1 teaspoon cornstarch.
  6. Whisk until combined.
  7. After meatloaf has baked for 35 minutes, remove the foil and pour the glaze over the loaf. Return to oven, uncovered and bake an additional 15 minutes.
  8. Let set 10 minutes before slicing.
