Matcha Cookies with White Chocolate

Ingredients
  1. 2 sticks butter, softened
  2. ​1/2 cup powdered sugar
  3. zest of half a lemon
  4. splash of vanilla
  5. 1 tablespoon matcha powder
  6. 2 cups flour
  7. 1/4 teaspoon salt
Instructions
  1. Preheat the oven to 350 degrees.
  2. ​Line a baking sheet with parchment paper, set aside.
  3. ​In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and powdered sugar until light and fluffy.
  4. Add the lemon zest and vanilla and beat to distribute.
  5. In a medium bowl, sift together the flour, matcha and salt.
  6. Add the flour mixture to the butter and mix just until combined (mixture may be crumbly...that's ok).
  7. Pour the dough/crumbs onto a sheet of plastic wrap and then wrap tightly, bringing the dough together to a disc.
  8. Refrigerate for 30 minutes.
  9. ​Roll out the dough on a well floured surface.
  10. Cut out cookies with a floured round (or any shape you like) cookie cutter.
  11. Place on prepared baking sheet.
  12. Continue until all dough is used.
  13. Chill the cookies on the baking sheet for 15-20 minutes.
  14. Bake in preheated oven for 10 minutes.
  15. Let cool completely.
  16. ​FOR THE MELTED CHOCOLATE
  17. ​4 ounces white chocolate, cut in chunks
  18. ​1/2 teaspoon vegetable oil
  19. ​Heat the chocolate in a microwave bowl at 15 second intervals, stirring after each time, making sure not to burn the chocolate.
  20. When the chocolate is melted, stir in the vegetable oil until combined.
  21. Drizzle across the tops of cookies (or dip tops if desired).
  22. Sprinkle with pistachios and lavender.
  23. Refrigerate to set the chocolate.
