Oatmeal Cookies with Sea Salt Caramel Chips
I don’t know what genius decided to make Sea Salt Caramel Baking chips….wait, yes I do….it’s Hershey’s!!! I couldn’t be more happy about that little discovery the other day in the baking aisle. So, what to do with them? Eat them straight out of the bag? Okay, what about the next bag? I got it! Oatmeal Cookies!!!!
It didn’t take me long to make these delicious things, and even less time to gobble them up like I was headed off to war and didn’t know when I would get another good meal…or cookie.
Oatmeal Cookies with Sea Salt Caramel Chips

Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup dark brown sugar
- 2 eggs plus 1 egg yolk
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups old fashioned oats
- 1- 10ounce bag Hershey's Sea Salt and Caramel Baking Chips
Instructions
- Preheat oven to 375 degrees.
- Line 2 baking sheets with parchment paper.
- Set aside.
- In a large bowl, cream the butter and both sugars until light and fluffy.
- Add the 2 eggs, yolk and vanilla and beat until combined.
- Add the flour, soda and salt.
- Stir until combined.
- Stir in the oats and chips.
- Using an ice cream scoop, drop 6 scoops on each sheet, evenly spaced.
- Bake approximately 12-15 minutes or until cookies are lightly golden brown.
