Fall has arrived in a flurry of crazy weather around here, and this weekend was a rainy, dreary, wonderful excuse for me to work on some recipes for the blog. Much like we tend to go straight from Halloween to Christmas, quickly passing over Thanksgiving, I think when Fall arrives we head straight past the apple bin to the pumpkin spice everything! Green Shakshuka
This weekend I made Shakshuka (pronounced shack shoe ka) and whenever I say it, I say it to the tune of “Brown Sugar” by the Rolling Stones….you just did too, didn’t you? Anywho, if you google Shakshuka you’ll find a bazillion recipes for it, and lots of discussion about it’s true origins. Traditionally, Shakshuka is a spicy tomato and pepper dish with cooked eggs, but I decided to try out a green version using tomatillos and spinach. A few years ago during a trip for work, I took some time to stop in Waco, Texas at the Silos Baking Company. If you’ve been under a rock and don’t know anything about that, it’s on the grounds of the silos made famous on the show “Fixer Upper” and home to all things Magnolia. The bakery sits on the corner and a long line snakes back and forth inside, allowing plenty of time to make you’re very difficult decision. Oatmeal Blueberry Pancakes
The past few weeks, we’ve been stuck in a real life, old timey winter. Snow, ice, frigid, frigid temperatures, and the forecast is throwing around words like “polar vortex” and “record breaking wind chills” for the upcoming week. So, what could be more soul satisfying on a cold winter Saturday morning. PANCAKES! Not just you’re run of the mill, everyday pancakes, but oatmeal pancakes dotted with fresh blueberries, dripping in butter and syrup…..ahhh. Several years ago I was in Aspen, Colorado to attend a Rufus Wainwright concert and had breakfast at a local haunt called “Poppycock’s CafĂ©”.
