Ingredients
  1. 1 1/2 cups sugar
  2. ​1/2 cup vegetable oil
  3. 2 eggs
  4. ​1 teaspoon vanilla
  5. 3/4 cup buttermilk
  6. 3 cups shredded zucchini
  7. ​zest of one small orange
  8. 2 cups all purpose flour
  9. 1/2 teaspoon salt
  10. 1 teaspoon baking soda
  11. 1 teaspoon baking powder
Instructions
  1. Preheat the oven to 350 degrees.
  2. ​Generously grease and flour a bundt pan or jelly roll pan and set aside.
  3. ​In a large bowl, combine sugar and oil and stir to combine.
  4. Add the eggs and vanilla and beat until incorporated.
  5. Add the milk, zucchini and orange zest.
  6. Add remaining dry ingredients and stir just until completely combined.
  7. Pour into prepared pan and bake.
  8. Approximately 40 minutes for Bundt pan or 25 -30 minutes for a jelly roll pan.
  9. ​Let cool.
  10. If using the bundt pan, then let cool about 20 minutes and turn out onto serving platter.
  11. Drizzle with a mixture of 1/2 cup sifted powdered sugar and 1 tablespoon orange juice.
