Just in time for St. Patrick’s Day….Guinness Bread!

If you follow me on Instagram, and you saw my Insta story on Wednesday, you know that I spent the majority of my day working on super glamorous projects around the house….like cleaning the oven, shampooing the carpets, removing months of dust from the window blinds and  scrubbing floors.  Oh the sophisticated life I lead!  Anyway, before I started the oven project I stirred up a quick bread that combines (are you sitting down for this?) bread, cheese and BEER!!!! How on earth could you pass that up?

I think it’ll make the perfect vehicle to deliver some leftover corned beef to my waiting mouth after St. Patrick’s Day.  Let me know if you try it and if you love it as much as I do!!!!

Guinness Bread with Smoked Gouda

Ingredients
  1. 2 cups all purpose flour
  2. 1 cup whole wheat flour
  3. 4 teaspoons baking powder
  4. 1 teaspoon salt
  5. 12 ounces Guinness Beer
  6. 2 ounces smoked gouda cheese, shredded
  7. 1/3 cup oats
Instructions
  1. Preheat the oven to 375 degrees.
  2. Butter or lightly spray with cooking spray a loaf pan.
  3. In a large bowl, combine the flours, baking powder, and salt.
  4. Add the shredded cheese and stir to combine, so that the cheese gets coated with flour.
  5. Add the beer and stir until completely combined. (dough will be stiff)
  6. Place dough in the prepared baking pan and smooth to edges of the pan.
  7. Sprinkle the oats on the top of the loaf.
  8. Bake for 45-50 minutes.
Notes
  1. You can also use 3 cups all purpose flour and eliminate the whole wheat, if desired.
