Ingredients
  1. 2 1/2 cups water
  2. 1 teaspoon salt
  3. 1 1/2 cups quinoa, rinsed
  4. 1/2 cup natural peanut butter
  5. 2 tablespoons chili oil
  6. 2 tablespoons soy sauce
  7. juice from 1 lime
  8. 1/2 teaspoon ground ginger
  9. 2 teaspoons sesame seeds
  10. 2 tablespoons sriracha (optional)
  11. 1/2 teaspoon salt
  12. 2 medium carrots, diced small
  13. 1/2 small red onion, diced
  14. 1/4 cup chopped fresh cilantro
  15. 1 can water chestnuts, drained
  16. 2 cups sugar snap peas
  17. 2 large handfuls fresh spinach, coarsely chopped
Instructions
  1. Bring the water and 1 teaspoon salt to boil in a medium saucepan.
  2. Add the quinoa and reduce the heat to simmer.
  3. Cover pot and let cook for 10 minutes, or until quinoa is cooked through and tender.
  4. Meanwhile in a large bowl, whisk together, peanut butter, chili oil, soy sauce, lime juice, sriracha, ginger and sesame seeds until smooth and combined.
  5. When quinoa is done, add it to the peanut butter mixture.
  6. Stir to completely cover quinoa.
  7. Add carrots, red onions, snap peas, water chestnuts, spinach and cilantro.
  8. Stir to combine. Season with salt, if needed.
  9. Garnish with chopped peanuts.
  10. Serve warm or room temperature.
