The Only Chocolate Chip Cookie You’ll Ever Need

Well, we’ve been sheltering in place now for about 3 days, and the truth is, I haven’t been this busy in a long time!!!  You would think that not going to work everyday, I would find myself with too much time on my hands, which would result in a lot of napping, tv watching, eating, napping, tv watching, napping, and so on and so forth.  Well that’s not really happening around here.  First and foremost, I vowed that everyday I’m home I would run a mile.  I know to some of you, a mile isn’t much, but when it’s been a very (and I mean very) long time since I ran, a mile is a good place to start.  I’ve also committed to reading for some part of the day each day.  I’ve also been busy keeping up with editing video content for my church’s website and Facebook, and as I mentioned in my last post, reviving my long forgotten YouTube Channel.

So today, in addition to editing a bunch of video, I shot a video for some amazingly delicious chocolate chip cookies.  These aren’t your average chocolate chip cookies, these are like meal replacement chocolate chip cookies, like maybe a couple meal replacement cookies.  The best part of them is that you don’t have to wait to soften the butter, and you can have them mixed up in almost no time.  The hardest part is waiting for them to cool so you can eat them.  You can watch the video here.

Chocolate Chip Cookies

Ingredients
  

  • 1 cup COLD butter, cut in cubes
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 3/4 cups all purposed flour
  • 1/4 cup cornstarch
  • 3/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 cups walnut pieces, roughly chopped
  • 12 ounce package Semi Sweet Chocolate Chips

Instructions
 

  • Preheat oven to 400 degrees.
  • Line 2 baking sheets with parchment paper, set aside.
  • In the bowl of a stand mixer, combine cold butter, brown sugar and granulated sugar. Mix on medium speed for about 4-5 minutes or until creamy.
  • Add eggs, one at a time, beating after each addition.
  • Add vanilla.
  • In a separate bowl, combine the flour, cornstarch, baking soda and salt. Whisk to combine.
  • Add dry ingredients to butter/sugar mixture. Mix until almost combined.
  • Add chocolate chips and walnuts, mix until combined, but don't overmix.
  • Divide dough into 8 large clumps and place 4 on each baking sheet.
  • Bake at 400 degrees for 12-15 minutes, rotating pans half way through.
  • Remove from oven and let set for at least 10 minutes before moving to cooling rack to cool completely.
