    Green Shakshuka

     This weekend I made Shakshuka (pronounced  shack shoe ka) and whenever I say it, I say it to the tune of “Brown Sugar” by the Rolling Stones….you just did too, didn’t you?  Anywho,  if you google Shakshuka  you’ll find a bazillion recipes for it, and lots of discussion about it’s true origins.  Traditionally, Shakshuka is a spicy tomato and pepper dish with cooked eggs, but I decided to try out a green version using tomatillos and spinach.  It might seem a bit complicated but it actually comes together pretty easily (after you do a little chopping and processing).   It’s a great brunch dish, or even a weeknight dinner.  Let…

    A few years ago during a trip for work, I took some time to stop in Waco, Texas at the Silos Baking Company.  If you’ve been under a rock and don’t know anything about that, it’s on the grounds of the silos made famous on the show “Fixer Upper” and home to all things Magnolia.    The bakery sits on the corner and a long line snakes back and forth inside, allowing plenty of time to make you’re very difficult decision.  Because I am, well, me, I’m always interested in things I’ve never heard of or tried before, especially when it comes to bakery items.   One of the bits…

    On Spreading Goodness….

    So, this past week I celebrated National Send a Card to a Friend Day by sending out some cards to friends, some of which I’ve known forever, some, I may have never actually met in person.  My intention was just to maybe brighten someone’s day with an unexpected note.  I have to tell you, I really had no idea just how much it would brighten my own.   Many of the cards I sent, were sent ON the actual day, so most probably haven’t arrived in the mailboxes of those I sent them to.  It still started my day off with such a positive vibe to drop those in the…

    Broccoli Cheese Soup

      If you follow me on Instagram, then last weekend you saw me make a quick pot of Broccoli Cheese Soup.  The soup has come in handy this week considering we have been having  record setting history making low wind chills!  I mean, I love snow and all, but these temps, I am not a fan of.  It’s been so cold, I even attempted to make the dog some booties out of an old sweater, duct tape and yarn.  Much like I want no part of these temperatures, he wanted no part of the booties.
